Return of the mac ....( once again ) 🦞

Right, you lucky folk here is my recipe Lobster Mac n' Cheese. 
This was mastered up in Scotland during the pandemic when lobsters where cheap and you could buy em straight off the ⛴️ 
Was a bizarre time yet a truly memorable experience 🏴󠁧󠁒󠁳󠁣󠁴󠁿 
You'll need the following ingredients: 
β€’ 300g Rigatoni  
β€’ 1 lobster 🦞  
β€’ 2 tbsp olive oil πŸ«’  
β€’ 1 onion, chopped 🌰  
β€’ 2 celery sticks, chopped 
β€’ 1 clove garlic, minced πŸ§„ 
β€’ 3 tbsp butter 🧈  
β€’ 3 tbsp flour 
β€’ 1ΒΌ cups milk πŸ₯›  
β€’ 200g cheese (mix of your choice) πŸ§€ I use a mix of mull cheddar , mozzarella and pecorino  
β€’ Salt and pepper πŸ§‚ πŸ§‚  
β€’ Cayenne pepper (to taste) 🌢  
Method 
β€’ Prep lobster ,retain head and tail ,remove flesh and portion 
β€’ Cook Rigatonu until al dente. 
β€’ SautΓ© onion, celery, and garlic in olive oil until soft. 
β€’ Make a roux with butter and flour; gradually whisk in milk until thickened. 
β€’ Stir in cheese until melted. 
β€’ Combine rigatoni, lobster meat, and cheese sauce; season. 
β€’ Bake at 200Β°C for 20 minutes until golden. 
If you want to be really posh serve this with a a lovely rare ribeye for the ultimate surf and turf. πŸ₯©πŸ¦ 
Maybe not a dish for every week but certainly something for special occasions.
